Lemon Chicken Broccoli Alfredo

I thought I'd share what we had for dinner tonight. My family loves this dish and we have it at least twice a month. It's fabulous!!!




Here's the recipe.

8oz. pasta (i use farfalle,or radiatori but use what you want)
3 cups broccoli florets
4 cups diced chicken (cooked
3 garlic cloves (pressed)
1/4 tsp. salt
1/2 jar prepared alfredo sauce
1/2 cup hot water
1/4 cup lemon juice
1/4 cup parmesan cheese
sniped fresh parsley

Cook pasta according to package directions. Spray Wok with PAM and press garlic into pan. Add broccoli and salt and cook until tender. Add pasta, chicken, sauce and water to skillet. Pour in lemon juice, stir and cook until heated through. Serve and garnish with cheese and parsley.

It's super easy and my kids love it, minus the parsley. I double this recipe and it makes enough to serve my mom, dad, robert, me, sage, aurora, my grandpa, and gives robert lunch for 2 days.

Prayers Needed

This morning my Grandpa called me and said that my Aunt Cula was being taken by ambulance to the hospital. She was up making bread and felt like she needed a rest. She went to lay down and a few minutes later my Grandpa went to go check on her. She was still breathing but he could not wake her up. He called 911 and the paramedics tried to wake her and couldn't. They came to the conclusion that she had a stroke. She was taken to the hospital and given numerous tests. Everything looks good, but they can't figure out what caused it to happen. Right now she is in a coma, and we're hoping she comes out of it soon. Any prayers offered in her behalf would be greatly appreciated. Thank you.

The Twilight Controversy

Okay, so I'm sure most of you have heard about this. There is a group of people who believe that Twilight is an EVIL thing. Seriously. It doesn't make any sense to me. Granted, it is a book that has a major character that is a vampire. In my opinion it's a love story about two teenagers and one of them just happens to to be a vampire. It's about good triumphing over evil.



It's not a graphic book or movie. I personally loved reading the Twilight Saga and enjoyed the movie very much. It has it's cheesy parts but what movie doesn't? If you take the time to read all 4 books, i think it's obvious that the Author is LDS and that does affect her books. Most Authors would have had Bella and Edward all over each other half way into the book. I believe that Stephenie Meyer's faith impacted her writing, and I am grateful for the example she has set.

There have been a few incidents at church with the Young Women where their Twilight possessions have been thrown across rooms and disrespected in numerous ways. I am sick of this and wish people would learn that it's not okay to disrespect other's property. Is this really the way Heavenly Father would want us to behave??? I don't think so.

New Camera!

So this morning my camera died. I've had it for 5 years and it's had more than it's fair share of problems. That being said, I LOVE my new camera! Thanks Jenn for the reccomendation.



It so small compared to my old Olympus. We only paid $150 for the new Sony but the Olympus cost us $500 and it in no way compares to the Sony. I'm going to be reading the manual all day tomorrow.

Yucky...

Have you ever had one of those days where you just feel yucky? I've been sick all weekend and finally I'm starting to feel better, but for some reason I still feel yucky. I think it's a combination of things really. For some strange reason San Diego seems to have skipped Spring all together and moved straight into Summer. It was 80 degrees at 8am. I haven't looked outside at the thermometer yet, cause I know it's gonna be worse, and because of the heat, I can't send Aurora out to play because her eczema flares up and her body becomes red, puffy and dry. I could let the others out but then Aurora gets all upset and it's really not fair to her. So here I am trapped indoors with 3 lively children two of which can't seem to stop fighting and it's driving me crazy today. Their super hungry, but won't eat anything and when they do it just comes back up, so it's crackers and juice for the third day in a row. My children are coughing so loudly that they sound like little smokers with emphysema. I'm going crazy with my two plus one daycare child and I'm thinking that I'm so grateful that I don't have more children and I'm wondering how some women do it. Heavenly Father sure knew what he was doing when he blessed with the right amount of children. Anyway, sorry just had to vent

Long Nights and Even Longer Days...

I just realized that it's been an entire week since I last blogged, but I just haven't really felt like it. This last week has been a crazy one. The kids haven't slept well this week, cause my dad is on a weird work schedule and the noise he makes while getting ready at 1am wakes them up and so they come into our bed and stay up until 6, so I'm lucky to get 2-3 hours a night. As a result the kids are grumpy and the days go slow and by the time Robert gets home I'm pretty much fried. I'm so glad that Spring Break is over and it's back to a schedule. I do better on a schedule. Spring Break had been pretty uneventful, Aurora's Eczema and Allergies have been acting up it makes it nearly impossible to leave the house. Her skin gets red and splotchy and she starts crying because it itches so much. Then the pollen affects her eyes and nose and her face gets swollen. And to top it all off I'm coming down with what I think is strep throat. Sorry for all the venting just had to get it off my chest.

Issues

My other Blog has had issues lately and i've tried to fix it, but nothing is working so i'll be deleteing it sometime this weekend. I'll be posting new cards to my SU! website culaparker.stampinup.net

Flash Back Friday - Philippines

My oldest Brother, Danny served his mission for our Church in the Philippines. The girl in this picture's name is Delhia. My brother was teaching her family. We became Pen-Pals. I remember getting a letter in the mail one day in a red, white and blue envelope with a lot of stamps on it, and being very excited that I received mail from so far away. I wish I still had the letter, but unfortunately it is no where to be found. I often wonder what happened to her and what she is doing.

More Like Family...

...Than friends. Since the day that Jessica, Savannah and Gabby came into our lives they have been more like Daughters to me and Sister's to Sage and Aurora. They are truly a part of our family! These pictures where taken last month one day after school. They always have a good time together on the trampoline.
